Yeah, so we all know Lily does not cook.... like ever.
When Goose and I first got married we ate Hamburger Helper meals and macaroni and cheese almost every night. When I actually attempted to cook, I usually burned it to a crisp or under-cooked the meal and knowing how much Goose loves to eat, it is a wonder we ever made it through.
He was really sweet though, he always ate what I made... and only laughed occasionally :)
I would love to say how things have changed, and how I am now this amazing master chef who whips out home-made meals that would make the Pioneer Woman salivate.... but no.
Sadly, I am still a terrible cook... but on the upside, Goose has become a great cook! (more out of necessity than anything, but whateves) He makes from-scratch creamed spinach to die for and killer fajitas... oh and did I mention the guacamole?
cause seriously, if we don't have guacamole at least once a week we start getting withdrawals.
But anyway, back to the reason you are here.

This is the only dessert I know how to make from memory- and it isn't anything that complicated, but my mom always made it for big family dinners, and I guess it's just one of those things I will always love!
It is light and sweet, but won't make you feel like you have to go run a marathon to burn off the calories you consumed...
* 1 medium container of cottage cheese(small curd)
* 1 regular. package of jello - orange (can use other flavors)
* 1 8 oz. tub of cool whip
* 1 can crushed pineapple bits (drained well)
(you can also use other fruits like mandarin oranges, but I love the pineapple!)
* Mix cottage Cheese and dry jello together. Fold in cool whip. Fold in fruit. Refrigerate until ready to serve.
